Is it Christmas 2021 already? I can’t believe it’s been a year since we’ve celebrated the holidays under lockdown. Luckily, with the country slowly opening up, we might be able to spend more time outside and finally meet up with more relatives and pals.

 

During the “holiday rush” last year, I remember how everyone resorted to buying everything online. Food, gifts, clothes, plants, decors, school supplies, gadgets, you name it. Essential or non-essential – you can find it on the internet!

 

The pandemic has also resulted in unfavorable eating practices. Hands up if you’re guilty of this. I sure am. But I’m now acting, and I’m re-adopting healthier lifestyle habits.

 

This brings me to one of my most favorite activities during quarantine – cooking! A healthful lifestyle involves eating wholesome, nutrient-dense foods. There should also be variety in the food we consume. I try to find balance whenever I cook for my family: veggies, fruits, meats, beans, dairy, the list goes on.

 

My kids can be picky eaters at times, but I’m glad they enjoy snacking on fruits, and one of their favorites is blueberries. They taste so good! It’s sweet and tart and oh so juicy! I love that my kids love them, too, because blueberries:

 

💙 are a good source of vitamin C that helps support the body’s immunity.

💙 are a good source of dietary fiber that makes us feel full longer and contributes to a healthy heart.

💙 are an excellent source of vitamin K that regulates blood clotting and bone metabolism.

💙 are an excellent source of manganese that supports bone development.

💙 are low in sodium, virtually has no fat, and has zero cholesterol.

I recently prepared a no-fuss dessert using frozen USA Blueberries. Check out the recipe of my No-Churn 4-Ingredient Homemade Blueberry Ice Cream. It’s so creamy good!

 

NO-CHURN 4-INGREDIENT BLUEBERRY ICE CREAM

 

No-churn 4-ingredient blueberry ice cream

Ingredients:

2 cups heavy whipping cream

14 ounces sweetened condensed milk

1 teaspoon vanilla extract

1 cup frozen USA Blueberries 

 

Instructions:

1. In a large bowl, use a hand mixer or a stand mixer to whip the cream until stiff peaks occur, be careful not to overwhip.

2. In another large bowl, whisk the vanilla into the sweetened condensed milk. Gently fold in the whipped cream with a spatula, slowly incorporating the two mixtures together.

3. Gently pour the blueberries into the cream mixture.

4. Transfer the mixture to an insulated tub or paper container and freeze for 4-6 hours.

5. Serve frozen and top with nuts and fruits!

September : Gratitude post

Today, I’m aware of the fact that life is better than I deserve. The world is full of pain and suffering, hardship and turmoil, disappointment and regret . So the fact that I can be thankful and mean it is, in its own way, a small miracle.

I am learning there is a responsibility that comes with privilege. That I am blessed to bless. Gifted to give. I am not lucky, fortunate, or merely disciplined; I am expected to do something with the grace I’ve been given.

So, I thought of making gaya 'coz why not? Pak na pak Mackerel Cakes (Tortang Mackerel)+ GIVEAWAY!!!

Ta-dah! Presenting to you our lunch for today: TORTA!!! 

And what makes it so healthy and special is that it's made from UNI-PAK Mackerel!

I betcha wonderin' "why fish?". My son has autism. He's 8 years old, and veeery picky when it comes to food. Fried Chicken, Hotdogs, Nuggets, Pancit Canton, Fried Pork Torta, these are the food on his menu. On the snack side we have biscuits, pandesal and tasty bread. Oh yeah, french fries and potato chips. And you cannot just make him eat anything outside his menu. That's just how he is. 

But as a parent, we want him to eat healthier food. So aside from the daily dose of vitamins, MITD and I have to be more creative to make him eat food outside his norm. 

Torta is one of his favorites. So I thought to myself, "what if it looks like torta?".

"Ding!" (ang bato! 😂)

Instead of ground pork, why not Mackerel? ☺️ and so MITD cooks... 😉 

This is also perfect this Lenten season.

So, here's the easy- peasy directions:

1. Remove large bones from center of mackerel. 

2. Take off skin and discard.

3. Flake meat into bowl. 

4. In separate bowl, mix together onion,garlic and potato. 

5. Add egg, breadcrumbs and mackerel. 

6. Shape into 6 or 12 equal cakes. 

7. Add oil to hot skillet and fry cakes on each side until golden brown (about 4 to 5 minutes per side).

8. Drain on paper towels and serve. 

Oily fish such as mackerel, salmon, and sardines are said to help against cardiovascular disease, prostate cancer, age-related vision loss, Alzheimer's disease and dementia. It's a good source of vitamin D, protein, some B vitamins and selenium. It's also a rich source of omega-3 fatty acids, a type of fat that is good for our health.
