Since I was a child, as soon as June approaches, I feel thrilled because it's my birth month. I don't eagerly anticipate gifts, but rather the greetings from family and friends. It brings me joy. I am easily pleased. It doesn't take much to make me happy. Whenever I am asked what I want for my birthday, my usual response is "nothing" or "I don't know; I can't think of anything I want or need." I am not materialistic. I am happy. I am healthy. I am blessed with family and true friends. Feeling ko nasa akin na ang lahat and I prefer inner peace. Fancy that! Haha. I find more joy in giving, whether to family, friends, or even strangers. But this time, I said, "Lord, can I give myself a gift this time?" Since a retreat in Batulao is not possible yet, I scheduled a day for myself for a pampering session at the mall. MOTT's TETE-A-TEA COOKIES

Makes 35 pcs.

An Earl Grey-enhanced cookie that’s light as clouds and low in sugar

Ingredients:

1 cup all purpose flour, sifted

1/2 cup Mott’s 100% apple juice

1/2 cup white sugar, sifted

1/2 cup unsalted butter

1 1/2 tsps. or 1 teabag Earl Grey

1 tsp. baking powder

1/8 tsp. salt

Procedure:

1. In a bowl, combine dry ingredients.

2. In a separate bowl, cream butter until smooth using an electric mixer. Add Mott’s 100% apple juice and mix. Add dry ingredients and blend well.

3. Using a tablespoon, drop cookie dough onto ungreased cookie sheet.

4. Bake in preheated oven at 180 degrees Celsius for 15 minutes.

5. Allow to cool in a rack and store in airtight container.

Recipe Variation: For a cake like texture, add one egg to creamed butter and beat until well blended before adding dry ingredients.
